Light and fluffy, these pancakes are great on their own. However, sliced bananas, blueberries, chocolate chips, and chopped nuts also pair well with the pancakes. Apples are thinly sliced and lightly sprinkled with stevia mixed with cinnamon!
These pancakes are bananas. No, I mean they are literally made from bananas. And eggs. Eggs and bananas, and that’s it. I can see that look you’re giving me right now, but you just have to trust. These two ingredients, whisked together and given a little skillet love, are truly something magical.

What you need:
1 tsp Vanilla
1 tsp Baking Powder
1/4 tsp Cinnamon
Put all ingredients in a food processor and blend well. Use a 1/8 cup for measuring batter on a griddle prepared with cooking spray. Cook pancakes 2-3 minutes on one side and flip – then cook for another 1-2 minutes.
In a small bowl mix together stevia (I use Truvia) and cinnamon – you can also use the brown sugar blends.
I made some for my husband with dark chocolate chips and a dollop of whipped cream! He loved them!
